California Roll Inspired Salad



I love this salad.  It has all of the flavors of a California sushi roll without having to use chopsticks.

Here is the recipe.

California Roll Inspired Salad ~ serves 8

3 cups sushi rice
3 1/2 cups water
1/2 cup seasoned rice vinegar
1 Tbsp. sugar + 1 Tbsp. pickled ginger juice
2 tsp. salt
1 Tbsp. wasabi paste
3 Tbsp. canola oil
1/2 English cucumber, peeled, halved, seeded, and chopped
2 carrots, shredded
4 Tbsp. pickled ginger, drained and chopped
2 avocado, peeled and chopped
2 Tbsp. sesame seeds, toasted
2 cups crab (optional)

1) Rinse rice with cold water and drain in a colander for 30 minutes.  Bring rice and water to a boil, simmer for 5 minutes covered, and remove from heat.  Let stand, covered, for 10 minutes (do not lift lid).
2) While rice is standing, simmer vinegar, sugar, salt until sugar is dissolved.  This will only take a minute or two.  Cool.
3) Pour rice, evenly, onto a cookie sheet and pour vinegar mixture over the rice.  Stir to combine.
4) In a small bowl place wasabi paste, 3 Tbsp of water, and oil.  Stir to combine.
5) In a big bowl add rice, wasabi dressing, cucumber, carrots, pickled ginger.  Stir to combine.  Add sesame seeds and avocado just before serving.  Add crab if you wish to.  Serve with soy sauce on the side for guests to drizzle if desired.
